Parsley

If it is your own parsley and it is clean there is no need to wash it. If you do ensure it is thoroughly dry before you freeze it.

You can just remove from the bigger stems (which you should freeze separately for stocks and flavouring),stuff in a box or bag and put in the freezer.

Or you can chop it before you freeze it and either freeze in a bag or box and put in the freezer, or put in an ice-cube tray. Do not under any circumstances allow any water near the parsley after you have chopped it if you put it in an ice-cube tray.

frozen parsley

I freeze all my left over herbs. Leafy ones like parsley & corainder I leave whole as WC says & freeze in small clear bags - you can even scrunch them up while they're frozen which saves on chopping (although they can be a bit uneven). I tend to chop or rip basil & tarragon before I freeze them in little tubs so I can spoon it out later. I also freeze fresh ginger, either finely chopped, in julienne or slices or even peeled & left whole - you can actually chop it up while it's still partially frozen too.

Ginger

No need to peel ginger. Grate from frozen and the skin stays behind on the grater. If you do want to peel it, just dip in boiling water for a second or two and the skin comes off very easily.
