Hi All

I've bought 2kgs (smallest amount!) of locally-farmed mussels that we are having tonight. As there only two of us I thought I'd cook all of them and if there are any left over put them in the fridge overnight, would this be OK. I don't want to freeze them as there is no room. Also can they be de-bearded and scraped in advance?

I think I would be tempted to divide them in two and do them for two meals. Or pig-out and eat them all at one sitting!

Perhaps with white wine, etc one day and paella the next. In which case I would keep the second half in the fridge, unprepared. They will keep well for 24 hours.

i did that amount for two of us the other week and it was too much! Even for OH who is a total gannet

i'd be inclined to clean and debeard all of them now, but cook second half tomorrow...

Thanks Welshcookie & Expat. I'm going to take both of your advices. I shall use half tonight and paella tomorrow with the rest. I totally agree that 2kgs is far too much for two, I think we would get very fed-up with eating that many.

I am now going to prepare them for the wine, chilli and garlic!
