Problems with meringues

Problems with meringues

Hi

I want to make meringue nests and pavlovas but no matter which method I use, they weep and/or are soggy underneath. I tried the method given by JimMck in April 2010's forum - a distinct improvement but the meringue nests dissolved the ricepaper they were sitting on and were totally wet underneath, although nice and white and dry on top.

I used 50g caster sugar to each egg white and baked them at 150C for an hour then turned off the oven until they were cold.

Can anyone help please?

I have only made Meringues once before - and followed delias method.
