Freezing cauliflower

Freezing cauliflower

We have a cauliflower glut at the moment and would like to freeze some, something the supermarkets seem to be able to do. But ours go yellow and loose a lot of quality.

Someone suggested blanching them in milk but that would make them good for macaroni cheese and not much else (well quiche and curry I suppose). Does anyone have the answer?

I always think the cauli is the best bit of picalilli. Get pickling!

Freezing Cauliflower

when we had 6 heads of cauliflower, i was a bit stuck with what to do, and i blanched florets only for about 4-5 mins. then straight in cold water - then left to drain and drain and drain and drain - with a few slight shimmys thrown in - then i placed on 3 baking sheets and open froze - then bagged up - i can;t stress they need to be very well drained then you don;t get the "mushy" delicate end bits.

Cauliflower solutions

Thank you both for your advice, there's so much cauliflower that I might try a piccalilli (?) with just cauli, or maybe with those tiny onions as well, they're my favourites.

Or a cauliflower curry chutney. Hmm, time to get inventing.

The freezing advice is just what I was looking for, we've been treating them like carrots which don't seem to care about a bit of water.

"when we had 6 heads of cauliflower" - that's what we have (or had), the champion was 6lb 12oz and 22 inches around the flower. One caught the sun and went a bit yellow so that's going in Aloo Gobi tonight.
