Delia's Dark Chunky Marmalade

What am I doing wrong. I have followed Delia's recipe for dark and chunky marmalade in the winter collection. There is no doubt that it is for me the best tasting marmalade ever but it is too runny. I follow the recipe carefully and at the final stage it bubbles away gently for 3 and a half hours plus. It never wrinkles on the saucer left in the fridge. Eventually I give up. Should I go on cooking it gently or am I in danger of over boiling it. Can anyone help?

Lemon juice

If you are having trouble g a set, add the juice of a large lemon, this will ensure a set.
If you put a couple of saucers in the freezer this will also help you to get a quicker result.
In jam making season I keep saucers permanently in my freezer.
If you do not want to add extra lemon juice(it really does work) you can let the marmalade simmer gently until it reaches setting point.
A good way to test if it is nearing a set , is to stir the marmalade , then hold the spoon up high , still over the pot, if the last few drops are starting to set as they drip then you are almost there.
