Freezing Eggs

Does anyone know if whole eggs can be frozen? I often use an egg to 'glaze' pastries etc but never use the whole lot. Can the rest be frozen and taken out for glazing again next time?
I've tried using that egg spray from Lakeland which is good in my opinion but my husband always says that it tastes strange when I use it,and quite honestly I've tried tricking him by saying I've just used egg and not the spray but he still knows the difference!

When we've had a glut I've frozen them beaten, to use for quiches etc.

Frozen eggs

I have a book called 'How to Freeze' and it states that eggs can be frozen whole or separated.

Whole. Freeze singly or in pairs. Break into small foil or plastic containers.

Beaten. Beat ones or twos adding 1.5mls salt or sugar to stabilise mixture. Mark whether sweet or savoury.

Egg whites. Place singly or in pairs in clean, small plastic containers with lids or use an ice- cube tray & when frozen remove and put into a polythene bag noting how many cubes equal one white.

Egg yolks. Break up yolks & mix with pinch sugar or salt per yolk. Freeze in ice-cube tray. One medium yolk will fill one cube. Again when frozen put into polythene bag.

On all of them remove the air, seal and label. The storage time for all the above is six months.

Hope this is of some help

Wendy :)
