Bantam eggs

We have bantams, could anybody please tell me how many eggs to use in a typical Victoria sandwich. Also how do I convert recipes that ask for large eggs? any advice would be most appreciated. Thank you

Two to one

I am able to purchase bantam eggs & I use a ratio of 2 bantam to one large hens egg.
Works for me.

I have tried to bake just an ordinary Victoria Sandwich today, it seems to have worked, but waiting for the hubby to come home for an expert decision Lol! I used 3 banty eggs, but one was a double yolk and quite large, so we will see. I will let you know the results.

Bantam Eggs

Hi there. We have got 14 chooks including 2 Bantams who lay tiny eggss and ex bats who lay massive ones, so calculating how many eggs to use in a recipe requires some thought.

My grandmother used to make her sponge cakes by weighing the eggs in their shells, and then using the same amount of fat sugar & flour - this works really well & so is great for large/small eggs.

For other recipes I always work on the basis that the "standard" egg in the recipes is 2oz or just under 60g. So work out the total weight of egg specified in the recipe & then use the same weight of your own eggs.

can't really help. But my nan used to weigh her eggs and then weighed the flour sugar and fats accordingly to egg weight too, and i believe she learned that from her mother and grandmother.
